Here's how.

    Cook the sweetcorn kernels in boiling water for 3 to 4 minutes until tender, drain and cool.

  2. 02

    Dice the tomato and cucumber and slice the onion very thinly.

  3. 03

    Toss everything with the lemon juice, olive oil and chopped herbs.
