Rinse the artichoke. Trim the stem and tough leaf tips with a sharp knife or kitchen scissors.

Set it in a steamer over simmering water. Cover and steam for roughly 30 to 45 minutes, adding water to the pan as needed, until a leaf pulls away easily and the heart is tender.

Serve with lemon juice and olive oil. Eat the tender flesh at the base of each leaf, discarding the tough leaf. Remove and discard the fibrous choke before eating the heart.
