Here's how.

    Hollow out the tomatoes and pepper, reserving the tomato pulp.

  2. 02

    Mix rice, chopped onion, herbs, pulp and olive oil.

  3. 03

    Fill the vegetables, cover and bake about 60 minutes at 180°C, until rice is tender.
