LET'S MAKE SOMETHING GOOD

Here's how.

    Cook the pasta in boiling water as the packet directs. Keep a cup of the cooking water, then drain.

    Meanwhile, soften the chopped onion in the olive oil for 4 minutes, add the sliced mushrooms and cook for 6 minutes until browned, then add the garlic for 1 minute.

    Add the canned tomatoes and the drained lentils and simmer for 10 minutes, adding a splash of the pasta water if it gets thick.

  4. 04

    Toss the sauce with the pasta and finish with grated hard cheese.
