LET'S MAKE SOMETHING GOOD

Here's how.

    Remove the thick stems from the kale and slice the leaves very thinly.

    Massage the kale with the olive oil and half the lemon juice for about 2 minutes, until it softens and darkens.

    Cut the apple into thin matchsticks and toss with the remaining lemon juice so it stays fresh.

    Combine the kale and apple, then top with chopped walnuts and shavings of hard cheese.
