LET'S MAKE SOMETHING GOOD

Here's how.

    Cook the peas in boiling water for 3 to 4 minutes until tender, then drain well.

  2. 02

    Roughly mash the peas with the lemon juice and olive oil, leaving some texture.

  3. 03

    Toast the bread, spread with the pea mash and crumble the feta over the top.
