LET'S MAKE SOMETHING GOOD

Here's how.

    Heat the oven to 200°C. Cut the sweet potato into 2 cm cubes, toss with 8 ml of the olive oil and roast for 25 minutes, turning once, until tender and browned.

    Drain and rinse the black beans and warm them gently in a pan with the remaining oil for 3 minutes.

  3. 03

    Dice the tomato and mash the avocado with the lemon juice.

  4. 04

    Fill a bowl with the sweet potato, beans and tomato, spoon the avocado on top and scatter over the herbs.
