Cut the washed broccoli into small florets and slice the onion finely.

Warm the olive oil in a covered pan. Soften the onion for 3 minutes, add broccoli and 3 tablespoons of water, then cover and steam for 5 to 7 minutes.

Uncover and let excess water evaporate. Add beaten eggs and cook gently, stirring, until fully set. Egg dishes should reach 71 C / 160 F.
