Salmon, sweet potato & broccoli tray bake

LET'S MAKE SOMETHING GOOD

Here's how.

    Heat the oven to 200°C. Cut the sweet potato into 2 cm cubes, toss with 6 ml of the olive oil on a tray and roast for 15 minutes.

    Toss the broccoli florets with 3 ml of the oil, add them to the tray and roast for 8 minutes more.

  3. 03

    Rub the salmon with the remaining oil, nestle it among the vegetables and squeeze the lemon over everything.

  4. 04

    Roast for 10 to 12 minutes, until the salmon flakes easily and reaches 63°C (145°F) at its thickest point.
