LET'S MAKE SOMETHING GOOD

Here's how.

    Cut the sweet potato into 1.5 cm cubes, peeled if you like. Dice the onion and pepper.

  2. 02

    Warm the olive oil in a lidded frying pan over medium heat. Add the sweet potato, cover and cook for 10 minutes, stirring now and then, until nearly tender.

    Add the onion and pepper and cook uncovered for 6 minutes, until soft and lightly browned.

  4. 04

    Make two small wells in the hash and crack in the eggs. Cover and cook for 4 to 5 minutes, until the whites are set and the yolks are firm.
